Beverage brands and fancy bartenders are crafting sophisticated extra-virgin cocktails and beers to appeal to the taste buds of the sober, temporary abstainers, and alcohol-averse in general. But how do they actually design these drinks? To what extent do they match our cultural expectations of what “drinking” should be?
