  • 1 lb sweet potato, Peeled and diced 1 inch
  • Kosher salt
  • 1/4 Cup Sour cream or full-fat plain yogurt, *Please refer to the instructions for non-dairy products
  • 2 1/2 Cup Chopped cooked turkey breast, Skin removal (approximately 1 pound)
  • 1/2 Spoon olive oil
  • 1 Green onions, Chopped
  • 2 Spoon Chopped fresh parsley
  • 2 Spoon Chopped fresh thyme
  • 2 Spoon Chopped fresh sage
  • 2 Celery sticks, Chopped
  • 4 ounce Frozen peas and carrots
  • 2 2/3 Cup Turkey or chicken soup
  • 1/4 teaspoon Kosher salt
  • Black pepper
  • 2 Spoon corn starch
  • Put the potatoes in a medium saucepan, add water and 1 tablespoon of salt, just like cooking pasta, and boil for about 16 to 18 minutes, or until tender.

  • Drain, return to the saucepan, add 1/4 teaspoon salt, sour cream and mashed potatoes, and cover.

  • Preheat the oven to 375F with a shelf in the middle.

  • Heat a large saucepan and add oil over medium heat. Add shallots, parsley, thyme and sage and cook for about 2 to 3 minutes until almost soft.
