Most FatHead dough recipes do not require vinegar, so I understand why you would question why vinegar is needed. Don’t worry, you won’t be able to taste the vinegar taste in a keto hamburger.
Vinegar is used to activate the baking soda and add more oxygen to the almond flour dough. The added oxygen makes the dough rise more during baking than the usual FatHead dough recipe.

When making any type of mozzarella cheese dough, it is important to prepare the ingredients because the whole process progresses very quickly. First, preheat the oven and prepare the pan.
I lined the pan with parchment paper, but this is not required.
Next, mix the eggs and vinegar and set aside. Put your cheese, almond meal, and ground flaxseed together in a microwave-safe bowl.
Melt in the microwave for 60 seconds (if necessary, repeat for another 30 seconds), then add the baking powder and egg/vinegar mixture.
Once your tomato bread dough is complete, cut it into 4 equal pieces, roll it into a ball, and shape it into a bun. Place the bread on a baking sheet, brush with olive oil, and sprinkle with sesame seeds if necessary. Now your bread is ready to bake.
⏲️ Baking time
To bake your tomato hamburger, heat the oven to 190C/375F. After the oven has heated up, the buns should be baked on the top rack for 12-15 minutes.
Baking bread on the top grill can make the top golden brown without overcooking the bottom.
After the tomato burgers are grilled, let them cool on the counter for 5-10 minutes before you slice and assemble your burger.
You must use high-moisture cheese Because it melts easily and has a smooth texture, this recipe is effective. I prefer the mild flavor of mozzarella cheese, but other high-moisture cheeses are also fine.
If the dough sticks to your hands too much While shaping the buns, try to wet your hands before handling the dough. This should help the dough not stick to your hands.
Every oven is different Therefore, please choose the pan you use to bake bread based on your experience in baking in the oven. I can bake these breads on metal biscuit slices without burning. However, if you experience bottom burning problems, try using a glass bakeware instead.
🔪 How to reduce carbohydrates
The easiest way to reduce carbohydrates in a keto burger is to pay attention to the ingredients added to the burger.
Ingredients such as tomatoes and onions can quickly increase the carbohydrates in the burger. On the other hand, the ingredients on hamburgers such as lettuce, mustard and kimchi will not add a lot of carbohydrates to your meal.
Another way to reduce carbohydrates is to make sliders or mini breads. You can easily use this recipe to make 6 mini hamburgers or 8 slider buns instead of 4 regular sized buns.
Most of the ingredients in this keto burger recipe are essential to the recipe. I haven’t tried to make them with egg substitutes, so I’m not sure how it turns out. If you try, please share a useful method for you.
