Scrambled Eggs with Mushrooms and Spinach is one of my preferred recipes for a quick high-protein, low-carb breakfast.

  • 1/2 Spoon olive oil
  • 1/4 Cup onion
  • 1 1/2 Cup Mushroom slices
  • 1/2 Cup Fresh spinach
  • 2 Big egg
  • 1 Large protein
  • 1 teaspoon water
  • Kosher salt and black pepper
  • 2 Spoon Cheese, such as Gruyere, Cheddar, or DF cheese, (Optional)
  • In a small bowl, whisk the eggs, egg whites, 1 tablespoon of water, 1/8 teaspoon of salt and pepper until combined.

  • In a medium nonstick pan, heat oil over medium heat.

  • Add onions and cook until tender and golden, 3 to 4 minutes.

  • Add mushrooms, cook and stir for 3-4 minutes or until tender. Add spinach; cook and stir until wilted.

  • Add egg liquid; cook and stir until the egg thickens and no liquid egg remains. If you want to add cheese, add eggs.
