  • Use a sharp knife to finely chop the chocolate and place it in a medium heat-resistant bowl. If the chocolate chunks are too large, they will not melt properly.

  • Heat the cream in a small saucepan or microwave until it is almost below boiling (you should see small bubbles and starting to boil around the edges). Let cool for 30 seconds (if your cream is too hot, it may separate the mixture).
