When my husband was out of town recently, I was 100% responsible for carpooling, parenting, eating, etc. (on an already very busy weekend, more on that below!), I knew I needed to make some simple dinners that kids would like. Quick Korean minced beef and vegetable rice bowl
This quick and easy Korean minced beef and vegetable rice bowl recipe is rich in flavor and perfect for those busy nights.
Serving size: 4
For stir-fry
- 1 Spoon coconut oil Or olive oil
- 1 Red bell pepper Remove seeds, cores, and cut into 2-inch slices
- 1/2 lb broccoli Remove the large stems and cut into slices about 1/4″ to 1/2″ thick
- 1 lb Ground beef
- 3 clove garlic minced

- brown rice Cooked according to packaging (4 servings)
- Fried eggs Summit (optional)
- Salt and pepper To taste

In a small bowl, stir together the sauce ingredients and set aside.

Heat oil in a large saucepan over medium high heat. Add the bell peppers and broccoli, stirring occasionally, until the vegetables begin to soften, 4 to 5 minutes.

Move the vegetables to the side of the pot and add the ground beef and garlic. Chop the meat with a spatula and brown the meat at the same time. Once the beef is fully cooked (it is no longer pink), mix it with the vegetables and pour the sauce (use a rubber spatula so as not to leave any honey behind!).

Reduce the heat and stir until the meat and vegetables are coated with the sauce. Once the sauce thickens, about 2 to 3 minutes later, scoop the mixture over the brown rice, season with salt and pepper, add a fried egg (if using) on top, and serve.
