Pasta alla Norcina (sausage + cream sauce)

Pasta alla Norcina on 100 Day of Real Food


raw material

  • 1/4 cup dry white wine, (Water can be divided)
  • 3/4 cup water
  • 3/4 ounce Pack dried shiitake mushrooms
  • 1 Spoon olive oil
  • 1/2 onion, Cut into small dices
  • 1 lb Bulk Italian Sausage, (Mild or spicy, depending on what you like!) or sausage link with casing removed
  • 1 cup Heavy cream
  • 1/3 cup Freshly grated parmesan cheese
  • 8 ounce Whole Wheat Fettuccine, (Or other shapes), cooked according to package instructions
  • Salt and pepper, To taste
  • Fresh italian parsley, Chopped for garnish

Instructions

  1. Put the wine, water and dried mushrooms in a small pot. Simmer over low heat until the mushrooms are soft, about 10 minutes. To remove any sediment, filter the liquid (and retain the liquid) through a fine sieve or coffee filter, and rinse the mushrooms with fresh water. Save it for sauce.

  2. Put the olive oil in the pot and heat Large frying pan Heat over medium heat, add onion, stirring occasionally, until it becomes translucent and soft but not brown, 4 to 5 minutes.Add the sausage, break it with a spoon and cook until it turns brown and no longer pink, 5 to 7 minutes. Drain and discard the fat.

  3. Add the mushrooms, mushroom liquid, heavy cream and Parmesan cheese, and stir to combine. Add the cooked noodles and simmer for a few minutes to help thicken the sauce. Season with salt and pepper, garnish with fresh parsley (and Parmesan cheese if needed), and eat right away.
