My mother always cooks Thanksgiving dinner, and now I continue this tradition. She likes cooking and entertainment, and she likes to host. When she did this, we all brought side dishes, appetizers and desserts to help, so she didn’t do all the work. This way we can enjoy our time together, because isn’t this everything?

I have always liked my mother’s homemade fillings. I took her recipe and lightened it a little without sacrificing taste. For more people, this recipe is doubled! Mom always fills up the turkey in one batch and then makes another batch in the casserole next to it.

It is best to cut the bread and let it stand overnight to harden, but if time is tight, you can put it in a 250°F oven for about 30 minutes, stirring halfway until the bread is completely hard.

  • If your bread is fresh, please preheat the oven and place the bread cubes on 2 baking trays. Bake at 250°F for about 30 minutes, stirring halfway until the bread is completely hard.

  • Increase the oven to 350°F.

  • In a large frying pan, cook the bacon over medium heat for about 2 minutes. Add butter; when melted, add onion, celery, parsley, sage, Bell seasoning, salt and pepper, sauté on medium-low heat until soft, about 5-10 minutes. Remove from the heat and let cool for a few minutes.

  • In a medium bowl, mix the chicken broth and eggs.

  • Add the bread to a large bowl and mix with the fried vegetables. Add the chicken broth and egg mixture and mix well. If the filling is too dry, add a little more broth or water until it reaches the right consistency.

  • Spray the casserole with cooking spray and add the fillings. (If covered with foil and refrigerated).

  • If making with turkey, pour some of the sauce from the cooked turkey over the filling. Bake without a lid for 40 to 45 minutes, or until golden.
