I bring this dish to my mom every Thanksgiving, because everyone loves it! Much lighter than traditional toast, and easy to make! If you don’t know what gratin is, it’s basically creamed spinach, topped with cheese, and baked in the oven.

Variety

  • I used Gruyere cheese here, but Swiss cheese or mozzarella cheese will work too.
  • You can also skip the melted cheese on top and use it as a simple creamed spinach instead.
  • Use a universal gluten-free flour mix (such as Cup4cup) to make this gluten-free.

Creamy spinach with a hint of nutmeg baked in the oven and topped with melted cheese is a decadent holiday side dish.

  • 3 Spoon Whipped butter, I used Land O Lakes
  • 1 Cup Chopped onion
  • 1/4 Cup flour, GF uses gluten-free AP flour
  • 1/4 teaspoon Freshly grated nutmeg
  • 3 Cup 2% milk
  • 3 lb Frozen chopped spinach, thawed, I used 3 16-ounce packages
  • 3/4 Cup Freshly grated parmesan cheese
  • 1 Spoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 1/2 Cup Shredded Swiss or Gruyere cheese
  • Preheat the oven to 425F°.

  • In a heavy-bottomed frying pan, melt the butter over medium heat. Add onions and sauté until translucent, about 10-12 minutes.

  • Add flour and nutmeg; cook for another 2 minutes, stirring occasionally.

  • Add milk and cook until thickened, about 5-7 minutes.

  • Squeeze as much liquid as possible from the spinach, then add the spinach to the sauce.

  • Add 1/2 cup of Parmesan cheese and mix well. Season with salt and pepper.

  • Transfer the spinach to a large baking dish and sprinkle the remaining 1/4 cup of Parmesan and Swiss cheese on top. Bake for 20 minutes, until hot and bubbling. Serve hot.
