This roast chicken reminds me of Shake and Bake, but it works very well. I discovered Shake and Bake, or maybe Oven Fry when my parents’ friends invited me to dinner when I was a kid. - 4 6 oz Boneless skinless chicken breast , Preferably organic
- Kosher salt
- 3/4 teaspoon Garlic powder
- 1/2 teaspoon Dried coriander
- 1/2 teaspoon chili
- 1 1/2 Spoon mayonnaise
- 1/3 Cup Seasoned Panko Breadcrumbs, Or gluten-free pankp

Tap the thicker end of the chicken to make both sides flat so that they cook evenly.
Add 6 cups of water to a large bowl, add 1/4 cup of coarse diamond crystal salt, and stir to dissolve.
Add the chicken breasts to the water, let them stand, and refrigerate for at least 1 hour, or up to 2 hours to brine.
Remove from the water, pat dry with a paper towel and discard the water.
Preheat the oven to 425F degrees. Spray 9 x 12 baking pan with olive oil.
