Colombian Chicken Sancocho de Pollo

A hearty soup almost like a stew, Sancocho de Pollo is a traditional dish from the Antioquia region of Colombia that combines potatoes, yuca, corn, plantains, and chicken.

When we’re craving chicken soup, Colombian Chicken Sancocho is the most comfort food for me and my family. In Colombia, “el almuerzo” is the main meal eaten in the afternoon, and this soup is also common. In Colombia I have fond memories of big family gatherings where they would get fresh chicken straight from the farm and make this over an open fire in the biggest pot I’ve ever seen. There are many different versions of sancocho as it is popular in several Latin American countries such as Puerto Rico and the Dominican Republic. Colombians usually cook sancocho with a whole chicken (feet and all), but I use skinless chicken thighs to lighten it up.

Here are the ingredients in my Colombian Chicken Sancocho recipe:

  • poultry: For boneless skinless chicken thighs, you can also use whole shredded chicken, boneless chicken breasts or drumsticks.
  • vegetable: Green onions, tomatoes, potatoes, frozen or freshly peeled piucas, corn, green plantains, garlic
  • seasoning: Cumin, chicken stock, salt, fresh coriander

What is Yucca?

Yuca, also known as cassava, is a starchy root vegetable similar to potatoes that can be found fresh or frozen in many supermarkets. If you buy fresh yuca, you need to peel and cut it before cooking. I think frozen yuca is easier to use because it’s ready to cook.

What can I use instead of yuca?

If you can’t find yuca, you can replace it with more plantains and potatoes.

What goes with sancocho?

Sancocho is usually served with rice and avocado.You can also add chili Spicy kick.

How to store, freeze and reheat

Sancocho is great for freezing. I like to keep it in individual containers so I can take it out for an easy lunch later. If you still have leftovers after four to five days, freeze the rest for up to three months. Thaw the soup in the refrigerator overnight, then reheat in the microwave or on the stove before serving.

  • 1 1/2 teaspoon olive oil
  • 6 Chives, Chopped
  • 1 Moderate tomato, Chopped
  • 4 clove garlic, Chopped
  • 6 Boneless Skinless Chicken Thighs
  • 1 Cup Chopped coriander leaves and stems, divided into
  • 3 Moderate red potatoes, peeled and cut into 6 pieces (1 lb)
  • 10 ounce frozen yucca, about 3 to 4 pieces
  • 3 Moderate Ear of corn, cut in half
  • 1/2 Moderate green plantain, Peel and cut into 1″ pieces
  • 1 teaspoon cumin
  • 2 Chicken nuggets
  • In a large pot, sauté shallots, onions and garlic in oil. Add the tomatoes and sauté another minute.

  • Add the chicken pieces and season with a pinch of salt. Sauté for a few minutes, then add the yucca and plantain and fill the pot with water.

  • Add the chicken pieces, cumin, and half of the cilantro and cover the pot.

  • Simmer for about 40 minutes. After 40 minutes, adjust the salt and add the potatoes and cook for another 15 minutes.

  • Add corn and cook another 7 minutes or until corn is cooked through.

  • Serve in a large bowl and sprinkle cilantro on top.
