We spent a lot of time outdoors this summer. I love it, but it also means that we need more food to eat in the wilderness! Even if you are not a person who likes outdoor activities, foil packets like these chicken fajitas are a great pre-made meal that you can cook in your home oven…or the fire pit in your backyard!

I like to make a meal ahead of time for dinner…Always thank my “early self” for completing all the work ahead of time, so that I can enjoy the evening! This cleanup is very simple, and you will be glad you made things so simple.

We recently enjoyed these chicken fajita foil packs on a paddle camping trip with the girls and their friends. This is a 24-hour free iPhone adventure, and four teenagers are rowing down the river with us!

We packed up everything we needed for two days and one night, and then headed to the boat-only campsite, one of our favorite places in North Carolina. All four children slept in the hammocks on the tree (there were insect nets around) and were really happy during the trip!

I was a little nervous when feeding the four hungry teenagers, but ended up fine with all the extra snacks and fillings we brought.

These chicken fajita foil packs are great for camping, but can also be easily made in the oven or backyard fire pit.

For data packets

  • 1 1/2 lb chicken breast, Boneless, skinless
  • 3 Bell pepper, (Any color), remove seeds, cores, and cut into thin slices
  • 1/2 Shallots, Peeled and sliced
  • 2 ear corn, Cut off cobb
  • 1 were able Pinto beans, Or black beans
  • 1/2 chili, Remove seeds, cores, and chop

Service (optional)

  • Shredded cheese, (Monterey Jack or similar)
  • sour cream

  • coriander
  • corn cake, we suggest Homemade Tortillas

  1. Cut 8 large pieces (each about 14-16 inches long) of aluminum foil, and then stack them vertically (to form a plus sign) to start the 4 grill packs. At this point, if needed, you can line them up with parchment paper-just put a layer on the foil.

  2. Spread the chicken, peppers, onions, corn, beans, and jalapenos evenly on each stack of foil, and slightly “flatten” the contents for even cooking.

  3. Stir the marinade together and drizzle an equal amount on the top of each foil packet.

  4. Carefully lift both ends of the bottom foil (so that the edges meet in the center) and curl it by folding at least three times. Rotate the bag, and then crimp the remaining ends in the same way. If you throw these onto the bonfire coals (directly on the fire is not recommended), you don’t want any chance to let the ashes get inside!   5. Store in the refrigerator for up to 24 hours (or in the freezer), then place the packet on the charcoal or outdoor grill for 10-15 minutes (or in the oven at 400 degrees Fahrenheit for 30-40 minutes) until the chicken is fully cooked ( The middle is no longer pink). When opening each bag, carefully let the steam out. Enjoy the accompaniment you need while hot.
