Whenever I make salmon for dinner, I usually make an extra piece at lunch to make this arugula salmon salad with capers and parmesan cheese-great, rich in quality fats and omega!


Arugula Salmon Salad

This is a simple recipe using leftover salmon, especially if you are cooking for one person. This is one of my top salads for lunch, the capers compliment the salmon so well! If you don’t have leftover salmon, don’t worry, I also provide cooking methods.

How to use up leftover salmon

Salmon is one of my favorite fish, and it is rich in omega-3 fatty acids! Salmon is also an excellent source of protein, with much less saturated fat than chicken or beef.

Variety:

  • If you live where there is no arugula, you can use mizuna or mixed vegetables.
  • Canned salmon works well here.

  • 1 1/2 Cup Baby arugula
  • 4 ounce Cooked Sockeye Salmon, Skin removal
  • 1 teaspoon Capers, Drain
  • 2 teaspoon Red wine vinegar
  • 1 teaspoon Extra virgin olive oil
  • 1 Spoon Parmesan cheese, Approximately 0.25 ounces total
  • Salt and fresh pepper to taste
  • I used leftover salmon, but if using raw salmon, just season it with a little salt and pepper, then bake at 400°F for about 10 minutes, or lightly spray oil in a pan. You can also use 400F air to fry salmon for 6 to 8 minutes.

  • To make a salad, put arugula on a plate, sprinkle with salt and fresh pepper, and top with salmon and capers.

  • Drizzle a little oil and vinegar on top and finish with fresh shaved Parmesan cheese.
