- 1 lb Jumbo (21-25) shrimp Peeling and gutting (tail open or closed)
- 1 Spoon Extra virgin olive oil
- 1 Little lemon Warmth and juice, plus extra service

- 1 teaspoon Dried coriander
- 1/2 teaspoon Dried oregano
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon Black pepper
- 1/3 Cup Italian seasoned whole wheat breadcrumbs
- 1/4 Cup Grated parmesan cheese
- Non-stick cooking spray

Pat the shrimp dry and place in a large bowl. Drizzle with oil, lemon zest and juice, garlic powder, parsley, oregano, salt and pepper. Stir well, then close the lid and let stand at room temperature for 15 minutes or refrigerate for 1 hour (if you leave the shrimp for longer, the citrus juice will start to decompose them).
